The ingredients needed to make Laksa (Malaysian Curry Noodles):
  1. Take Rice Noodles (GF) / Eggs Noodles (Non-GF)
  2. Make ready 10 prawns (remove shells and keep them aside)
  3. Get 2 chicken thighs
  4. Prepare 10 fried tofu
  5. Prepare Bean Sprouts
  6. Take 6 fishballs (optional)
  7. Get 2 boiled eggs (cut into half)
  8. Make ready – paste ——–
  9. Prepare 2 inch galangal (chopped)
  10. Prepare 2 inch ginger (chopped)
  11. Take 5 gloves of garlic
  12. Take 5 small red shallots (chopped)
  13. Take 5 macadamia nuts
  14. Take 1 lemongrass (remove the skin and chopped)
  15. Get 2 stalks coriander roots (chopped)
  16. Make ready 8 dried chillies (soaked in water and chopped)
  17. Make ready 7 dried shrimps (soaked in water)
  18. Prepare 1 tsp shrimp paste
  19. Prepare 1 tsp tumeric powder
  20. Make ready coriander seeds
  21. Make ready 1 tsp salt

While asam laksa normally uses thick rice noodles, curry mee is often made with yellow spaghetti-sized noodles or even thinner vermicelli known as mee hoon. Cook the rice noodles in boiling water until softened but still a little firm in the centre. Drain and divide among serving bowls. And serve with sambal oelek, lime wedges, a sprinkle of coriander and bean sprouts. *NOTES - This recipe makes more laksa paste than you need.

Instructions to make Laksa (Malaysian Curry Noodles):
  1. First to make prawn stock. In a pot, add oil and prawn shells. Cook for about 5 mins.
  2. Add 1.5 litre chicken stock enough in the pot.
  3. Add 2 chicken thighs in the pot. Leave it for 25 mins.
  4. Remove the foamy part on the top. remove the chicken thighs and prawns shell and save the stock.
  5. Shred the chicken and set aside.
  6. In a large pot, add oil and paste in.
  7. Add coconut cream & stock. leave it simmer for about 15 mins. Salt to taste.
  8. Add tofu, fishballs, prawn meats
  9. Add bean sprout, shredded chicken, egg, coriander on top.
  10. Optionally, Lime or sambal on the side for garnish.

Drain and divide among serving bowls. And serve with sambal oelek, lime wedges, a sprinkle of coriander and bean sprouts. *NOTES - This recipe makes more laksa paste than you need. Curry Laksa (Curry Mee) is one of the signature dishes of the Malaysian Chinese community. It comes in various versions from mild to spicy with different toppings, depending on region. The common theme is the coconut milk base curried soup with noodles.
